Beverage Production and Packing Operation-  "Craft Brewery" by The Asheville Kombucha Mommas' LLC

There is a bit of magic in the mountains surrounding Asheville, North Carolina.  Part of this magic is what's happening in the food and beverage industry.  We don't know if it has anything to do with the mountaineers' long tradition of moon-shining special "elixirs", or if it has more to do with the special creativity that seems inherent among the folks of the region, or perhaps it's a combination of the two.  For example, because of the impressive numbers of craft breweries in relation to its population size, Asheville is formally recognized as "Brew City, USA".  We're not talkin' yer mass-produced/distributed Bud or Miller, either.  The high quality and diversity of these craft-brewed offerings is an international standout when it comes to lists of "beer meccas".  Beer was originally home-brewed as an inexpensive, yet highly-fortifying beverage for hard-working peasants who often couldn't get 3 nutritious square-meals a day. It's interesting to know that beer is not the only thing brewing in the mountains of North Carolina!

There are other ancient forms of brew that have been handed down through the ages.  Being of an oriental origin, they are based upon fermented teas, and are considered to be pro-biotic fortifying tonics.  Westerners have now "discovered" this ancient elixir, Kombucha, and are creating a new renaissance in natural brews that are, as the Chinese say, "the tea of immortality". 

After several years of experimentation and collaboration, two Asheville women have developed what is quickly becoming recognized as a "world class" Kombucha tea, which they've named "Buchi".  Popularly known as the Asheville Buchi Mommas, Jeannine Buscher and Sarah Schomber have created a brew that stands head and shoulders above the more typical mass-produced offerings that are now being distributed nationally.  In multiple blind and double-blind tastings, nothing else compares favorably with Buchi, which has a uniquely smooth taste and texture, with a finish that leaves you wanting "just one more sip, forever".

How do they do it? That's their carefully guarded secret.  But we do know that they start off with water.  Not just any water, but ancient Appalachian mountain water.  Now, as anyone in the beverage packaging business knows, a producer can not sell to the trusting public any drink that could cause sickness or disease, so the quality of the water is important.  And since kombucha, like beer, is a fermented drink that depends upon certain naturally-occuring and beneficial microbes to help create the "magic of the brew", any outside organisms, chemicals, or contaminants that could be introduced by the water are not acceptable to the Buchi Mommas.
